  3. Combine in bowl: In a large salad bowl, mix cucamelons, cherry tomatoes, and crumbled feta cheese.
  4. Add herbs: Tear fresh mint leaves and sprinkle over the salad.
  5. Make dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Toss & serve: Drizzle the dressing over the salad and toss gently. Serve immediately!
